Erasmus+ Project: Group Two

The Koperattiva Produtturi taz-Zebbug Limited organised the visit of the second group of members of the Cooperative for a training programme in Olive Oil Tasting under the Erasmus+ programme.  The Group consisted one Group Leader and 12 members from the Cooperative.  The training was organised at San Casciano Val di Pesa (Provence of Firenze) under the leadership of AIRO - Associazione Internazionali dell Ristoranti dell'Olio between the 21st and 28th March, 2025.

The training course was conducted at the La Ginestra Agriturismo.  AIRO provided the Official Olive Oil Tasters and a number of Professors who all delivered professional theoritical and practical lessons on the tasting of olive oil.  All participants had to undergo a number of tests during the course.

The topics covered during the training programme under the form of Olive Oil Tasting Course were:  Sensory Analysis, olive oil negative attributes, chemical and physical characteristics of olive oil, the classification of olive oils, olive oil world production, the olive oil production process, influence of technology on quality of olive oils, filtering techniques and olive oil storage, olive growing and the effects on olive oil quality, practical illustration of the Panel Room, negative winey attributes, the Fruity thresholds, olive oil and health, the historical aspects of olive oil in the world.

The Group was provied by the opportunity to attend a special session about Olive Grove Management with a professional agronomist from Tuscany Dr. Angelo Bo.  The discussion took about thre hours and the Cooperative is highly indebted to Dr. Bo for his support to the Cooperative and the members present.

At the end of the programme, the Group organised a cultural tour to Firenze and Pisa in order to valorise the cultural experience from these highly visited cities in the Tuscany Region.

The Cooperative would like to thank the group members for their active participation, the Management of AIRO, especially the President Dr. Marta Mugelli and the EUPA Malta Agency for their continued support and guidelines.

The Participants were all presented with a Certificate for the completion of the Olive Oil Tasting Course.  The Certificates were signed by the Hosting Organisation (AIRO), the Sending Organisation (KPZ) and the Mayor of San Casiano Mr. Roberto Ciappi  The ceremony for the presentation of the Certificates was held at the Agriturismo with the presence of the Mayor Mr. Ciappi.
